So often diabetics feel left out whenever there is a party, whether it’s a wedding reception, birthday party or Christmas day. Most people simply don’t take diabetics into consideration and this can be particularly difficult for children who are always being invited to birthday parties only to find that they can’t eat anything because of all the sugar. Here are a couple of cake recipes that are diabetic-friendly and would make a great addition to any celebration.
Carrot Cake Recipe
Cake Ingredients
2 c. of flour
2 tsp of baking soda
2 tsp of cinnamon
1/2 tsp of ground ginger
1/2 tsp of salt
3 eggs
1/4 c. of mayonnaise
2 c. of carrots (grated)
1 (8 ounce) can crushed unsweetened pineapple (with juice)
1 tsp of vanilla
1/2 c. of walnuts (chopped)
1 c. of raisins
Topping Ingredients
1 c. of whipping cream
1 tsp of vanilla
8 tsp of artificial sweetener
Heat the oven to 350F and then grease an 8 inch square cake tin. Take a large mixing bowl and add in the flour, baking soda, cinnamon, ginger plus the salt. Using a separate bowl you then beat up the eggs and mayo. Then add the egg and may mixture to the flour mixture. Add in the other ingredients and give it a stir. Place in the oven for half an hour. When you take it out of the oven allow it to cool for several minutes and then remove the cake from the tin and allow it to completely cool. In terms of making the topping, you simply beat up the whipping cream until it’s nice and thick. Then add the vanilla and sweetener before spreading over the cake.
Diabetic Fresh Apple Cake
2 c. of Splenda granular
3 eggs
1 1/2 c. of oil
1/4 c. of orange juice
1 tbls of cinnamon
3 c. of self-rising flour
3 c. of chopped apples (peeled)
1 tbls vanilla essence
1 c. of pecans (chopped)
1 c. of dried coconut (shredded and unsweetened)
Heat the oven to 325 degrees and then grease a tube pan. Place all the ingredients in a large bowl, making sure you fold in the apples, nuts and coconut last. Place this cake mixture into the pan and bake for about 1 and a half hours. The allow it to cool before serving. If you wish you can lightly dust the top of the cake with icing sugar just to make it look nicer.
